After an evening of craving rocky road and cake, I made these marvellous things. I mean what better way to combine the two sweet treats I love the most.
I agree, not the most picturess cupcakes that we've all seen out there but I can assure you, they taste better than they look. They are however as sickening as they look haha!!!
Not only are they yummy, they are also easy and quick to make. Perfect if you ask me :)
To make these bad boys, you will need:
150g butter (I used stork)
150g caster sugar
175g self raising flower
25g coco powder
3 eggs
For the icing and topping:
175g butter
200g icing sugar
50g coco powder
1 tsp milk
Maltesers or some sort of biscuit. Mini Maryland cookies would be cute
Dark chocolate
Mini marshmallows
Pecans or walnuts
Instructions:
1. Preheat your oven to Gas mark 4
2. Beat your eggs
3. Mix the butter, sugar, flour and coco in a large bowl
4. Slowly add your eggs whilst stirring in-between pouring. If the mixture is too dry, add a small amount of milk
5. Evenly distribute your mixture into 12 cupcake cases. I use an ice-cream scoop as i find it makes them the most even once baked
6. Pop your tray in the oven and cook for about 15 minuets but 20 minuets if you think they need longer
7. For the butter icing, cream the butter in a bowl
8. Slowly add the icing sugar
9. If need add some milk to make it less dry
10. Pipe your butter icing however you desire.....You could literally just plop it on there with no care because its going to be covered with decorations!!!
11. Decorate to your hearts content
11. Ta dah, you have finished your rocky road extravaganza
YUM!!! Dont they look utterly scrumptious. I bet your mouths are watering, right? Mine are!!!
